Almond Butter + Banana Protein Bites

These “on-the-go” snacks are perfect for post-workouts. Let’s say you have to run a few errands after you workout and it will probably be another hour or more before you can get some protein in your body-which is VERY important for your muscles after you workout. These yummy little guys can help carry you over with a powerful punch of protein! I used Vital Proteins Collagen Unflavored and added 3 scoops, which is roughly 41 grams of protein, then include the small protein addition that comes from the almond butter. The balls in the above picture were rolled in unsweetened shredded coconut, which also provides some healthy fat, which is also very good for you after an intense workout. I will be posting the recipe for the balls that I made in the picture, but there are so many ways you can have fun with these protein snacks by adding other ingredients!

Prep: 10 minutes- Makes 12 balls


  • 1 cup of almond flour
  • 1/2 cup of flax meal
  • 1/4 cup of chopped almonds (I buy the slivered ones and just chop those. I like the extra crunch.)
  • 1 TBS of chia seeds
  • 1 ripe banana
  • 3 scoops of Vital Proteins Collagen Unflavored
  • 1 tsp of vanilla extract
  • 1/2 cup of almond butter
  • 1/2 cup to 1 cup of shredded unsweetened coconut (serve more as needed)


Place a parchment paper down and pour the 1/2 cup of shredded coconut on it getting it ready for the balls. Then, combine all of the rest of the ingredients in a large mixing bowl and mix by hand. It’s really sticky, but I found this way to be the best way to evenly mix. Plus, it’s fun to get your hands sticky sometimes! 🙂

Once it is all mixed, grab a small amount and roll into bit-size balls (maybe somewhere close to the width of a quarter. It’s really up to you). Then, gently roll onto the shredded coconut and place aside. Store these in your refrigerator and grab them before you head out the door!
