Spicy Lime Butternut Squash

This Spicy Lime Butternut Squash goes great with the Shredded Pork Jicama Tacos that I posted last night. I actually made these last night, but I was pretty pooped and decided it was time to unplug from the computer!

A big helpful hint on getting the zig-zag shape for your butternut squash….go purchase it pre-cut from your local H-E-B in the produce section! πŸ˜‰

A little side note, I made this breakfast hash this morning using some leftover shredded pork and the Spicy Lime Butternut Squash and then fried an egg over it. It was amazing! Have fun with your food!

Now, let’s get started!

Ingredients:

  • 12 ounces of pre-cut butternut squash
  • 1 TBS of olive oil
  • 1 tsp of chipotle powder
  • 1 tsp of salt
  • 1 lime
  • 2 TBS of fresh chopped cilantro

Directions:

Preheat your oven to 425 degrees. Meanwhile, combine the olive oil, chipotle powder, and salt in a large bowl and mix the ingredients. Then, add the butternut squash and toss in mixture. Next, line a baking sheet with parchment paper and spread the seasoned butternut squash over the paper. Cook for 25 minutes, or until tender and signs of toasting. Remove and squeeze lime juice evenly over the butternut squash and spread cilantro as well. Then, Enjoy!!!!
